Cookery (Professional) Technical Certificate

Entry Requirements:
A range of 3/2 or D-E grades plus an interest in catering. Students who do not have English and Maths at grade C/4 or above will be required to study these alongside.

Course content
This qualification is structured to enable you to work with a wide range of commodities in the preparation, cooking and presentation of dishes in a professional kitchen. You will complete a variety of units covering all basic aspects of catering which will include:
Boiling, poaching and steaming
Stewing and braising
Baking, roasting and grilling
Deep frying and shallow frying
Producing cold food
Safe working practices for the hospitality industry
Introduction to professional cookery
Tools and equipment used in professional cookery
How will I be assessed?
The practical elements of this course are assessed by means of timed assessments, the preparation and cooking of individual and multiple dishes. Other types of assessment include research assignments, written question papers, small projects and presentations.
