Cookery (Professional) Advanced Diploma (Kitchen and Larder)

Entry Requirements:
You are likely to have previous experience and/or a relevant Level 2 Diploma in Culinary Skills/Professional Cookery or equivalent qualification. Students who do not have English and Math at grade C/4 or above will be required to study these alongside this qualification.

This course builds on the professional kitchen and larder catering skills learnt at Level 2 and develops the skills and knowledge needed to work as a chef in a professional kitchen. This qualification is designed to help you enter employment with a higher level of understanding and responsibility or to be able to start at a more prestigious establishment. As the Catering industry becomes ever more competitive, the advantage lies with those chefs who successfully attain both higher level qualifications and skills, alongside concrete industrial experience. The Level 3 Advanced Diploma will help to provide you with the skills and experience to progress your career and give you a competitive edge.

Course Content
This qualification will help you develop advanced skills and techniques to produce dishes using a variety of commodities. The topics that will be undertaken are designed to develop advanced skills, knowledge and techniques, including the preparation and cooking of vegetables, complex meat, poultry and game dishes and complex fish and shellfish dishes.
You will also cover complex theory to give you a greater understanding of the areas required to progress in the catering industry, these include:
How to plan, implement and supervise food safety in the catering industry.
The supervisory skills require to help run a kitchen.
The gastronomy behind developing food.
New product development.

How will I be assessed?
All practical skills are assessed in our professional kitchen within normal lessons, by means of timed assessments. Theory knowledge and understanding is assessed by written assignments and theory question papers.

Are there any special expenses?
Students are required to purchase a top up catering uniform and small equipment to their Level 2 Uniform and equipment. This can be purchased through the College.

What could I do next?
You could enter employment as a chef within the catering section of high end establishments, such as Fine Dining Restaurants, Michelin Star/Rosette Restaurants, Luxury Hotels or Cruise Liners. You may have the opportunity to undertake further learning, such as Higher Education, Foundation Degrees, Level 4 qualifications, or an Advanced Apprenticeship.
