Level 3 Subsidiary Diploma Hospitality students visited The Grand Hotel in Eastbourne this week to speak to executive chef, Hrvoje Loncarevic, about factors to consider when planning menus.
Hrvoje answered questions to support students understanding for menus they must plan as part of their assignment. Students will be able to apply this knowledge in lessons this week when they are preparing, cooking, and presenting dishes of their own.
